Pomegranate Salad

Each month, Brooke and I participate in a date night group with some of our friends. Not only does this give us (especially Brooke) a much needed break from the daily routine of dishes and diapers, it gives us a chance to connect with friends each month without five boys underfoot. The boys seem to like it as much as we do and look forward to having a babysitter for the evening.

Last month, we had dinner and a gift exchange. While the gift exchange was fun, the highlight of the evening for me was a pomegranate salad that our friends the Stanfills brought. They were nice enough to send us the recipe and it has now been officially added to our list of favorite dishes. In fact, it has been given a permanent spot on our Christmas Eve menu, which very few dishes have managed to attain (sorry Scott and Amy . . . it did not replace the Tomato Aspic).

With a little help from the food processor, it is a simple task to turn this . . .

We are drooling over here. It was sooo good! Definitely need to replicate, so could you send me the recipe? Impressed to see at day three that you're keeping your post-a-day promise ;)
